

Baked Asparagus Fries
Coming from a true carb’ lover (Yes, I can admit it, I’m Italian, you can’t blame me.) During the holidays, I make an effort to be aware of the kind of treats I cook and serve. This recipe is one of my favorites and a great healthy alternative for a mindful and truly addictive side dish! I encourage you all to try – I promise you won’t regret it! And your friends will thank you for it too!
Baked Asparagus Fries
Vegetarian // 30 min prep // Serves 4
Produce
1 lb of Asparagus
Refrigerated
2 Large Eggs
Baking + Spices
1 lb of Asparagus
Bread + Baked Goods
1 cup of *Panko
Dairy
1/2 cup Grated Parmesan Cheese
Instructions
- Preheat oven to 425 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
- In a large bowl, combine Panko and Parmesan; season with salt and pepper, {remember, less is more- in this case, you can always add more if need!} . Then, Set aside.
- Working in batches, dredge asparagus in flour, dip into eggs, then dredge in Panko mixture, pressing to coat.
- Place asparagus in a single layer onto the prepared baking sheet. Place into oven and bake for 10-12 minutes, or until golden brown and crisp.
- Serve immediately.
Notes
*Panko is a Japanese-style breadcrumb and can be found in the Asian section of your local grocery store.
